Watergate Salad

Hereā€™s what you need:
  • 2 cups heavy whipping cream
  • 1/8-1/4 cup powdered sugar
  • 1 large can of crushed pineapple
  • 1 small box of pistachio pudding
  • 1 cup chopped pecansĀ or pistachios
  • 1 cup shredded coconut
  • 2 cups miniature marshmallows
Using a stand mixer or a beater, whisk your cream until it starts to thicken. Add your powdered sugar and continue to beat/whisk until medium stiff peaks form. Set aside.

In a large bowl, mix your pineapple, pudding mix, walnuts and coconut until well combined. FoldĀ in your whipped cream, careful not to mix too much. It should stay light and fluffy.Ā

Add your miniature marshmallows and stir just to combine.Ā Ā

Refrigerate until ready to serve. Enjoy!

NOTE: Using pistachios really amps up the pistachio flavor and adds a nice pop of green too!
