Traditional Derby Pie
Here’s what you need:
- 4 eggs, room temperature
- 3/4 cup packed brown sugar
- 3/4 cup karo syrup
- 1/3 cup all purpose flour
- 2 Tbsp. Bourbon (optional, but recommended)
- 1 tsp. vanilla extract
- 1/2 cup Butter, melted
- 3/4 cup chocolate chips
- 1 1/2 cup chopped pecans
- 1 unbaked, 9 inch pie crust
Preheat oven to 325 degrees.
Add your eggs, brown sugar, karo syrup and flour to a large mixing bowl and whisk really well until it's smooth and there are no lumps from the flour.
Add the bourbon, vanilla and melted butter and mix well to combine.
Now add your chocolate chips and chopped pecans and mix well.
Pour into your unbaked pie crust and bake in your preheated oven for 1 hour. Allow to cool completely before cutting. Serve with a scoop of vanilla ice cream. Enjoy!
