Texas Hash

Here’s what you need:
  • 1 lb. ground meat of your choice
  • 1 cup finely chopped onion
  • 1 cup finely chopped carrots
  • 2 stalks celery, chopped
  • 15 oz. can diced tomatoes, not drained
  • 15 oz. can black beans, not drained
  • 1/2 cup uncooked rice
  • 7 oz. can green chilies, undrained
  • 1 tsp. chili seasoning (or to taste)
  • 1 tsp. dried parsley
  • 1 tsp. salt
  • black pepper to taste
  • 2 tsp. minced garlic
  • Sour cream for garnish
  • Chives or green onion for garnish
Preheat oven to 375 degrees. Lightly spray a 9x13 baking dish and set aside. 
 
In a large skillet, begin browning your meat. Add your onion, celery, and carrots. Cook until the meat is fully cooked, and no pink is showing. The veggies should be getting tender too. 
 
Once the meat is fully cooked, drain any excess grease from your pan. Add the tomatoes, green chilies, black beans, rice, garlic and seasonings. Mix well to combine and heat through.
 
Pour the hash into your prepared baking dish and bake for 30 minutes. 
 
Optionally, you can remove it at 25 minutes and sprinkle your favorite cheese on top. Broil on low the last 5 minutes, but watch that it doesn't burn! Enjoy!
