Sweet Potato Cheesy Chicken Cups

Here’s what you need:
  • 1 - 20oz. bag of Crispy Bite Size Sweet Potato Puffs
  • 1/4 cup Shredded Cheese (I used cheddar)
  • 1 medium yellow bell pepper, finely diced
  • 1/2 small sweet onion, finely diced
  • 6 oz. Cream Cheese, softened
  • 1 - 1 1/2 cups finely diced rotisserie chicken breast
  • 1 small can green chilies
  • 1 1/2 tsp. B. T. Leigh's "Somethin' for Everything" seasoning
  • Maple Syrup for drizzle after baking (optional)
Preheat oven to 425 degrees.
 
Place three tots in each cup of a mini muffin tin. Bake for 15 minutes.
 
Remove from oven and allow to cool slightly. Using your fingers, a spoon, or a small round dough tool, press down on the tots in the center to form cups. Bake for another 15 minutes until crispy.
 
While the tots are baking, make your filling. In a medium bowl mix together the chicken, shredded cheese, cream cheese, pepper, onion, chilies and seasoning. Set aside until the second bake is complete on the tots. 
 
Remove the tot cups from the oven and fill with the cheesy chicken mixture. About 1 tsp or so per cup. 
 
Top with a bit of shredded cheese and bake for another 10 minutes. 
 
Remove from oven and allow to cool for a few minutes before removing from the pan. Best served warm. Enjoy!
 
**NOTE: You can substitute garlic, powder, onion powder, salt and pepper for the B. T. Leigh's seasoning blend.
