Strawberries & Cream Mousse
Here's what you need:
1 cup strawberries
1/3 cup sugar
2 TBSP cornstarch
1 egg yolk
1 cup heavy whipping cream
In a medium saucepan, crush the strawberries or use an immersion blender or food processor to blend them into a pulp. Add the sugar and the corn starch and whisk until well blended. Add the egg yolk and whisk that in.

Cook, whisking constantly, until thick. Remove from heat and place in a bowl. Press plastic wrap over the top and chill in the fridge.
In a chilled bowl beat 1 cup heavy whipping cream until thick.
Once the strawberry mixture is cooled, mix with your beater to loosen (it will be a very thick Jello like consistency). Then add to the whipped cream and using your mixer, mix on high until all combined. It will cream together and form the mousse.
Put this mixture in a piping bag and pipe into your dessert dishes or you can spoon it in. Top with a slice of strawberry, some chocolate shavings, chocolate syrup or just leave plain. Enjoy!
