Southern Pineapple Casserole
Here’s what you need:
- 1 16 oz. can Pineapple tidbits, drained
- 1 16 oz. can Pineapple chunks, drained (reserve 1/4 cup juice)
- 5 Tbsp. all purpose flour
- 1/2 cup granulated sugar
- 1 1/2 - 2 cups shredded Sharp Cheddar Cheese
- 32 Ritz crackers, crushed
- 1/2 cup Butter, melted
Preheat oven to 350 degrees.
Drain both cans of pineapple well and save 1/4-1/3 cup.
In a large bowl, add flour, sugar, pineapple chunks and tidbits, reserved pineapple juice and cheddar cheese. Mix to combine all ingredients well.
Pour the pineapple mixture into your prepared 9x9 pan. Set aside.
In a small bowl, add crushed Ritz crackers and pour melted butter over them. Mix to combine well. Now sprinkle the Ritz cracker mixture over the top of the pineapple mixture. (I sprinkled a little more cheese on top, but this is optional)
Bake in your preheated oven for 30-35 minutes or until it's golden brown on top. Serve immediately and enjoy!
