Roasted Vegetables
Hereā€™s what you need:
- 1 small head broccoli, chopped
- 1 small head cauliflower, chopped
- 1 medium onion, chopped into large pieces
- 1 large red bell pepper
- 2 medium sweet potatoes, pealed and chopped
- 1/3-1/2 cup Olive Oil
- Approximately 1 Tbsp.Ā BT Leigh's "Somethin' for Summer" seasoning (or seasoning of choice)
- Kosher salt to taste
Preheat oven to 425 degrees. Line your baking sheet with parchment paper. Set aside.

Add all of your prepared veggies to a large mixing bowl. Pour olive oil over the veggies and toss to coat. Add more, if needed, until they are coated well. Generously sprinkle your seasoningĀ over the veggies and toss to coat. Add additional seasoning if needed to your desired taste.

Roast in your 425 degree, preheated, oven for 20 minutes or until the veggies are knife tender. Serve hot on the side of any protein or pasta...and enjoy!
