Roasted Artichokes w/Hot Honey Dipping Sauce
Here’s what you need:
- 1 can Artichoke Hearts, drained
- Juice of 1/2 lemon
- Olive Oil
- Approximately 2 tsp. BT Leigh's "Somethin' for Everything" seasoning (or seasoning of choice)
- 1 tsp. Nutritional Yeast, plus a sprinkle on top after you put it in your baking dish
- 2 heaping Tbsp. of avocado mayo
- 2 heaping Tbsp. of Greek yogurt
- 1-2 Tbsp. Mike's Hot Honey (or to taste)
Preheat oven to 375 degrees. Line your baking dish with parchment paper. Set aside.
For the artichokes:
Add your drained artichoke hearts to a medium bowl. Drizzle olive oil over the artichokes and toss to coat. Add lemon juice and toss again. Add your seasonings and nutritional yeast and toss to coat them well. Pour out into your baking dish and sprinkle additional nutritional yeast on top.
Roast in your 375 degree oven for 30 minutes or until the artichokes are crispy. You can put them under the broiler for just a couple of minutes, if needed.
For the dipping sauce:
Add mayo, yogurt and hot honey to a small bowl and mix well to combine. Set aside.
Serve hot with the dipping sauce on the side. Enjoy!
