Rice Pudding
Here’s what you need:
4 1/2 cups of cooked minute rice
3 Tbsp butter
1 cup Sugar
3/4 tsp salt
5 cups milk (divided)
1 1/2 tsp vanilla
3 eggs
Cinnamon to taste
Cook your minute rice according to the directions for 4 servings.
When the rice is cooked, add it to a large saucepan and add 4 1/2 cups milk, butter, salt and vanilla. Cook for 20 minutes, stirring occasionally.
In a small bowl, beat the three eggs and then add the final 1/2 cup of milk and mix that in. Set aside.
After the rice mixture has cooked for 20 minutes, remove about 1/2 cup of it and add to the eggs. Mix to temper the eggs.
Add the egg mixture to the pan and stir continuously for 5 minutes.
Remove from the heat and add in the cinnamon to taste. Serve warm or cold. Enjoy!
