Potato Soup
Here’s what you need:
- 1 - 32 oz. bag of frozen Ore-Ida Hash Brown Potatoes
- 32 oz. Chicken broth
- 1 packet of Pioneer Country Gravy Mix (or any country gravy mix)
- 1 medium onion finely diced
- 1 cup finely chopped carrots
- 2 Tbsp. minced garlic
- Salt & Pepper to taste
- 1 cup milk (optional)
- 2 Tbsp. butter
In a medium sauce pan, melt your butter and add the onion and carrots. SautĂ© for 5-7 minutes until tender. Add the minced garlic and stir to combine. Add the hash brown potatoes, gravy packet and chicken broth. Stir to combine all ingredients together.Â
Â
Add your milk now, if using, and stir to incorporate. Cook over medium heat until it comes to a boil, then turn down to low and cover, cooking for 30 minutes until the soup is thick and creamy. Salt and pepper to taste, add your toppings and enjoy!
Â
NOTES**: You can add whatever toppings you like to this.Â
Â
The milk is optional and will make it creamier, but it not necessary. It's a preference thing for me!
Â
Make sure you don't use the sausage gravy mix, it needs to be the "Country Gravy".Â
