Pineapple Upside Down Cake (w/Strawberries)

Here’s what you need:
  • 1 box Krusteaz Cinnamon Swirl Cake mix
  • 1/4 cup oil
  • 2/3 cup water
  • 1 egg
  • Splash of vanilla
  • 1 16 oz can Pineapple chunks or rings
  • 1 1/2 Tbsp butter
  • Fresh sliced strawberries
  • Whipped Cream (optional for topping)
Preheat your oven to 350 degrees. While it is preheating, melt butter in bottom of your baking dish (either an 8x8 or a large iron skillet work well). 
 
Add your pineapple to the bottom of the baking dish. Use the brown sugar and cinnamon package from the cake mix and sprinkle it all over the top of the pineapple. 
 
Now mix your cake mix according to the directions (adding a splash of vanilla) and pour over the top of the pineapple. 
 
Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. 
 
While the cake is baking, slice your strawberries and add a bit of the reserved pineapple juice to them. Set aside until ready to serve the cake.
 
Top with fresh sliced strawberries and whipped cream. Enjoy!
