Perfect Egg Salad
Here’s what you need:
- 4 eggs hard boiled
- 1/4 red onion diced
- 2 Tbsp finely diced celery
- Fresh dill chopped to taste or about 3/4 tsp dried dill weed
- 1/2 tsp Paprika (or to taste)
- Salt and pepper to taste
- 3 Tbsp mayonnaise
- 2 tsp Dijon mustard
- 1/4-1/2 tsp minced garlic
- 1 1/2 tsp fresh lemon juice
- 1 tsp lemon zest (optional)
Chop your eggs and add to a bowl with the onion and celery. Add the dry seasonings and mix to coat.
Add the mayo, mustard, garlic and lemon juice (and zest, if using) and mix well to combine.
Serve atop a green salad or on a slice of that delicious Amish White Bread. Enjoy!
NOTE ~ This recipe makes 2-3 servings and can easily be doubled.
