Pecan Sandies
Here’s what you need for a full recipe:

2 sticks (1/2 lb.) butter, unsalted and softened
1 cup vegetable oil
1Â Â cup sugar, granulated
1 cup confectioner’s sugar (sifted)
2 large eggs
1 tsp vanilla
4 cups all purpose flour
1 tsp baking soda
1 tsp cream of tartar
1 tsp salt
2 cups chopped pecans
½ cup granulated sugar for rolling

Preheat oven to 325 degrees.

In a large bowl, cream together butter, oil and both sugars until smooth. Beat in the eggs one at a time and then stir in the vanilla. In a small bowl, combine the flour, salt, soda and cream of tartar. Stir into the creamed mixture. Mix/fold in the pecans.

Roll into 1 or 2 inch balls and roll each ball in the remaining sugar. Place on a parchment lined baking sheet and bake for 10-14 minutes or until the edges are golden. Remove from baking sheet and cool on wire racks. Enjoy!
