Peach Upside Down Cupcakes

Here’s what you need:
  • 1 Yellow or white cake mix of your choice, mixed according to directions on box
  • 1 stick of butter cut into pats of butter
  • Brown sugar
  • Fresh or canned peaches
Preheat your oven to 350 degrees.
 
Mix your cake mix according to the directions on the box and set aside.
 
Place a pat of butter into the bottom each baking cup. Add 1/2-1 tsp. of brown sugar on top of the butter. Now add 3 slices of fresh peaches or 3 chunks of fresh canned peaches.
 
Pour your cake batter over the peaches and fill the cups about 3/4 full.
 
Bake in your preheated oven according to the cake mix box, approx. 20-23 minutes, until a toothpick inserted in the center comes out clean.
 
Remove from oven and turn out onto a cookie sheet. Sprinkle with just a bit additional brown sugar to garnish. Enjoy warm with some vanilla ice cream!
