Brazilian Pao de Queijo - Cheese Bread

Here’s what you need:
- 3 cups YOKI flour (see link below or click here)
- 1 cup milk
- 1/2 cup water
- 1/2 cup oil
- 1 tsp kosher salt
- 1 egg
- 1 cup grated cheese (Parmesan or other hard cheese)
In a saucepan, bring to just a slight boil the water, oil and salt.

In a large mixing bowl, add the YOKI flour and milk and then add the boiling water/oil mixture.

Mix with a large fork until it all comes together. Add your egg and mix well. The dough will be wet.
Â
Add your cheese and begin to knead in the bowl. Add more YOKI flour (1/4 cup at a time), if needed, to reach the consistency you’re looking for.

Drop by the spoonful for a more rustic look or roll into balls and place on a parchment lined baking sheet. Bake in a preheated 400 degree oven for 16-18 min or until they are golden brown and sound hollow to the tap. Enjoy!

NOTE ~ You can roll these out and freeze them and then bake as needed. Store them in an airtight container in the freezer.Â
