Onion Rings
Here’s what you need:
- 2 medium onions, peeled and cut into 1/4 inch rounds
- 1 1/3 cups all purpose flour
- 1 1/2 tsp. baking powder
- 1 tsp. salt
- 1 egg
- 1/2 cup milk
- 1 1/3 cups bread crumbs
- seasoning of choice
- About a quart of oil (I used Avocado)
In a deep sauce pan, on medium, heat oil.
While the oil is heating, peel and slice your onions.
You will need three shallow bowls. In the first, add flour, baking powder and salt. Mix lightly to combine.
In the second, whisk your egg with the milk.
In the third, add your breadcrumbs.
Lightly coat each onion ring in the flour and then dredge them in the egg mixture. Now coat them well with the breadcrumbs and place on a rack inside a baking sheet.
Once you have all of the rings breaded, you can start frying them a few at a time. Turning them over after about 2 minutes and cooking them on the other side for about 2 minutes. Or, until they've reached the desired golden brown you are looking for.
Remove them from the oil and place them on a paper towel lined plate. Sprinkle them with the seasoning of your choice (I used the B.T. Leigh's "Somethin' for Everything") while they are still hot. This will help them absorb the seasoning better.
Serve while they are still hot and enjoy!
