Nutter Butter Cookies
Here’s what you need:
For the cookies:
- 1 cup creamy peanut butter
- 1 cup sugar
- 1 egg
Blend peanut butter, sugar and egg together until it forms a dough. Roll into 1 1/2 inch logs and place on a parchment lined baking sheet.
Using a fork, press down on the cookies in both directions to create a grid pattern on top. Now, gently squeeze the center of each cookie to form a “peanut” shape.
Bake in a preheated 350 degree oven for 10-12 minutes.
For the icing:
- 1/4 cup softened butter (room temp)
- 1/4 cup creamy peanut butter
- 1 cup powdered sugar
- 1-2 Tbsp milk
Mix the peanut butter, butter, powdered sugar and 1Tbsp of the milk together in a bowl (you can use a mixer or a fork) until it’s the consistency you want. Adding more milk if needed.
Cool cookies completely before icing and making the sandwich cookie. Enjoy!
