No Sugar Added Banana Breading

 

Here’s what you need:

5-6 medium bananas (about 2 ½ cups)
¼ cup melted coconut oil or neutral-flavored oil
2 eggs
1 tsp vanilla or banana extract
1 ¾ cups white whole wheat flour
1 ½ tsp baking powder
½ tsp baking soda
½ tsp kosher salt
1 tsp cinnamon
½ cup mix-ins such as chopped nuts, raisins, or chocolate chips

Preheat oven to 325 degrees and lightly grease your loaf pan (I used a heart shaped pan).

In a large bowl, combine the bananas, oil, eggs, and vanilla extract and mix with a whisk until well combined. Combine your bananas with the wet ingredients and blend until smooth.

Add the flour, baking soda, baking powder, salt, cinnamon, and any mix-ins; stir just until combined. Pour batter into your prepared pan.

Bake for 60 minutes or until a toothpick inserted into the center comes out completely clean. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack and let it cool another 15-20 minutes before slicing. Enjoy!
