Lemon Bars

Here’s what you need:
 
For the crust:
  • 1 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans

For the filling:

  • 4 eggs, well beaten
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 2 large lemons, juiced and zested
Preheat your oven to 350 degrees. 
 
In a medium mixing bowl, combine softened butter, flour, sugar and pecans. Mix until it forms a soft dough. Press into the bottom of a 9x13 baking dish. Bake for 15-20 minutes until it's golden brown.
 
When the crust is almost done, in another mixing bowl, whisk together the sugar and flour to break up any lumps in the flour. Whisk in the eggs, lemon zest, and lemon juice until well combined and creamy. 
 
Pour this mixture over the crust and put it back in the oven for an additional 20 minutes.
 
The bars will firm up and set as they cool. When they are completely cooled, cut into squares and sprinkle with powdered sugar. Enjoy!
