Lasagna Soup
Here’s what you need:
- 1 lb cooked meat (beef, pork, and chicken all work)
- 1 large onion diced
- 1 bell pepper diced (any color)
- 1 25 oz jar marinara sauce
- 1 14.5 oz can of fire roasted tomatoes diced
- 32 oz of beef or chicken broth
- 1 Tbsp minced garlic
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1 tsp onion powder
- 1 1/2 tsp salt
- 1 tsp pepper
- 6-8 oz of noodle of your choice (if using lasagna noodles, break into pieces before adding at the end)
Add your cooked meat to your crockpot and add all of your other ingredients, EXCEPT for the noodles.
Cook on high for 2 hours.
Add your noodles after 2 hours and cook an additional 25-40 min depending on the noodles you use.
Serve with mozzarella and a dollop of ricotta cheese. Enjoy!
