Hot Corn Dip

 
Here’s what you need:
  • 4 oz. cream cheese, softened
  • 1/2 cup sour cream (can use greek yogurt also)
  • 1/2 tsp. garlic powder
  • 1 small can green chiles, undrained
  • 1/4 cup diced sweet onion
  • 1/2 cup shredded pepper jack cheese
  • 3/4 cup colby jack cheese, plus more for topping
  • 1 pint sweet corn (or a 15 oz. can)
Add your softened cream cheese to a mixing bowl and add the sour cream and shredded cheeses. Mix well to combine.
 
Add the garlic powder and stir to combine. Add your diced onions and green chiles and fold those into the cheese mixture.
 
Next add your corn and gently fold it into the mixture.
 
Pour this into a lightly greased 2 quart casserole dish and sprinkle additional cheese on top.
 
Bake at 350 degrees for 25-30 minutes or until the top is brown and bubbling. You can broil it for a minute or so, if needed.
 
Serve with tortilla chips. Enjoy!
