Hawaiian Crockpot Chicken

 
Here's what you need:
  • 2 1/2 lbs. chicken (breasts or thighs, boneless/skinless)
  • 1/2 red bell pepper
  • 1 medium onion chopped
  • Somethin' for Rubbin' BBQ Seasoning from B.T.Leigh's Sauces and Rubs or other BBQ seasoning
  • 1/2 cup brown sugar
  • 1/3 cup ketchup
  • 2 Tbsp soy sauce (can use low sodium)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 2 garlic cloves minced
  • 1 tsp ginger
  • 1 can crushed or chunk pineapple
  • cornstarch and water to thicken (if needed)
Add chicken to crockpot and season generously with the B.T. Leigh's Somethin' for Rubbin' seasoning. Add the onion and pepper on top. 
 
In a small bowl, mix together the brown sugar, ketchup, soy sauce and seasonings until well combined. Add crushed pineapple (if using chunks only add the juice at this point) and mix well.
 
Pour over chicken. (if using pineapple chunks, add the chunks to the top now). Do not stir.
 
Put your lid on and cook on high for 4-6 hours or low for 6-8 hours.
 
Serve over rice. Enjoy!
 
NOTE - I topped mine with a bit of the Batata Palha (potato sticks) and it was yummy!
