Corn Bread

Here’s what you need:
  • 1 cup corn meal
  • 1 cup all-purpose flour 
  • 1/4 cup granulated sugar
  • 1 tsp. salt
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/3 cup milk
  • 1 cup buttermilk
  • 2 eggs, lightly beaten
  • 1 stick butter, melted
  • 1 Tbsp. butter for melting in skillet
Preheat your oven to 425 degrees. Place your 9-10 inch iron skillet in the oven to heat up while you make the batter. 
 
Add all of your dry ingredients to a mixing bowl.
 
In a separate bowl, whisk eggs well and then add milk and buttermilk.
 
Pour the milk/egg mixture into the dry ingredients and whisk well to combine. Now add the melted butter and whisk together well. Batter will be fluffy!
 
Remove the skillet from your oven and put 1 Tbsp. butter in it to melt. 
 
Pour in batter and bake for 20-25 minutes or until it's golden brown and a toothpick inserted in the center comes out clean. Enjoy!
