Cheesy Taco Pasta Bake
Here’s what you need:
- 1 lb. ground pork (can also use beef)
- 10-12 oz macaroni pasta cooked al dente
- Olive oil for sautéing vegetables
- 1 medium onion, diced
- 1 red bell pepper, diced
- 1-2 Tbsp. Taco Seasoning (I used B. T. Leigh's "Somethin' to Taco About")
- 1 16 oz. jar of salsa
- 1 16 oz. queso cheese dip
In a large saucepan, cook your pasta until it's al dente.
While the pasta is cooking, sauté your onion and bell pepper in olive oil for about 5 minutes. Add your ground pork (or beef) and cook completely. Add the taco seasoning and cook, stirring for about a minute until well combined.
Add your meat mixture to the cooked pasta and then add the salsa and cheese dip. Cook, stirring until combined and heated through.
Transfer to a 9x13 baking dish, spreading to all the corners, and top with shredded mozzarella cheese. Bake in a preheated 375 degree oven for about 25 minutes or until the cheese is brown and bubbly. Garnish with sour cream, diced tomato, cilantro or avocado. Enjoy!
