Cabbage Noodle Stir Fry

 
 
Here's what you need:
 
Base ingredients:
 
  • 1  cup yellow onion diced
  • 1 medium carrot julienne sliced
  • 1 red bell pepper, julienne sliced
  • 2 Tbsp minced Ginger
  • 5 cups shredded green cabbage
Sauce ingredients:
 
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup maple syrup
  • 1 Tbsp. apple cider vinegar
  • 1 Tbsp. tahini paste
  • 1 Tbsp. tomato paste
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cornstarch
Other ingredients:
 
  • 6-8 oz cooked noodles of choice
Fill a large stock pot with water and bring to a boil. Add salt and pasta and cook to al dente.
 
Add your sauce ingredients to a bowl and mix well. Set aside.
 
In a large skillet, add a bit of olive oil and add onions, carrots and red bell pepper. Sauté over medium-high heat for 7-9 minutes until softened. Lower heat to medium, add the garlic and ginger and stir constantly for one minute.
 
Add cabbage and 1/4 cup water and cook until cabbage wilts and reaches desired tenderness.
 
Add sauce mixture to skillet and stir to incorporate and thicken the sauce. Bring to a boil and then reduce heat to simmer for 2 minutes.
 
Add the cooked noodles and stir well to coat and heat them through. Use a bit of reserved pasta water if sauce is too thick. Top with green onions, red pepper flakes, or toasted sesame seeds. Enjoy!
