Broccoli Slaw Salad

Here’s what you need:
  • 1 lb broccoli slaw
  • 2  packages chicken ramen noodle soup (don’t cook it!)
  • 1/4 cup of slivered almonds
  • 1/4 cup sunflower seeds
  • 3 green onions
  • 1 medium apple, diced
Put all of these ingredients in a large bowl and toss to mix well.
 
For the dressing:
 
  • 1/2 cup sugar
  • 1/2 cup oil (I used avocado oil)
  • 1/3 cup vinegar (white or apple cider are best)
  • 2 seasoning packets from the soup
  • Juice from 1/2 large lemon or 1 medium lemon
Add all of these ingredients to a shaker bottle or jar with a lid and give a good shake to dissolve the sugar. Pour over the slaw mixture and toss to coat well.
 
Serve immediately for crunchy noodles or let sit overnight in the fridge for softer noodles. It’s delicious either way! Enjoy!
