Breakfast Egg Cups
Here's what you need:
- 6 eggs
- 1 cup, precooked, turkey sausage (or sausage of your choice, just make sure to drain it well)
- 1 cup shredded cheese of your choice
- 1/2 cup chopped fresh spinach
- 1/2 cup diced cherry tomatoes
- 1/4 cup diced bell pepper
- Salt
- Pepper
- Garlic Powder
Add your eggs to a medium mixing bowl and whisk until fluffy.
Add the sausage, spinach, tomato and pepper. Add the seasonings to taste and mix until well combined.
Pour into a greased, 6 cup, muffin tin. This will fill them right to the top, if using the one like I have as they are deep cups. If you use a shallower muffin tin, you could get 10-12 egg cups.
Bake in a preheated 350-degree oven for 30-35 minutes. Enjoy!
Notes: The veggie combinations are endless...have fun with it!
