Walnut & Oat-Crusted Salmon

Here's what you need:

  • 2 salmon fillets (approx. 6 oz. each), skin removed
  • 1/4 tsp. salt
  • 1/4 tsp. pepper
  • 3-4 Tbsp. quick-cooking oats, crushed
  • 3-4 Tbsp. walnuts, finely chopped
  • 2 Tbsp. olive oil

Preheat your oven to 400F. Line a baking sheet with parchment paper. Place salmon on the baking sheet and season both sides with salt and pepper. 

Combine remaining ingredients in a small bowl. Press the mixture onto the top of the salmon. Bake until fish just begins to flake easily with a fork, 12-17 minutes. 

Serve with your favorite sides. Enjoy!
