Tender Beef & Noodles (Crockpot)

- 3/4 lb. beef stew meat
- 1/3 cup onion, chopped
- 1 1/2 tsp. avocado oil
- 1 cup water, divided
- 1/3 cup ketchup
- 1 Tbsp. brown sugar
- 1 Tbsp. Worcestershire sauce
- 1/2 tsp. smoked paprika
- 1/4 tsp. ground mustard
- salt & pepper to taste
- 3 Tbsp. all-purpose flour
- hot, cooked noodles for serving
- minced parsley for garnish
In a small skillet, brown your beef and onion in oil. Transfer to your 1 1/2 qt. crockpot. In a small bowl, add 1/2 cup water, ketchup, brown sugar, Worcestershire sauce, paprika and ground mustard. Mix to combine well and pour over the beef and onions. Cover and cook on high for 5 hours, or until the meat is tender.
Once the meat is tender, mix together the flour with the remaining 1/2 cup of water until smooth. Stir flour mixture into the meat and cover and cook another 30 minutes until thickened.
Meanwhile, cook your noodles according to package directions and drain. Serve the beef over noodles with a sprinkle of minced parsley for garnish. Enjoy!
