Taco Slaw

Here's what you need:

  • 1/4 cup Greek yogurt (or - mayo)
  • 1/4 cup buttermilk
  • Juice and zest from one lime
  • 1/4 tsp garlic powder
  • 1 tsp yellow mustard
  • 1/4 cup fresh cilantro, chopped (or about 2 Tbsp dried) or to taste
  • salt and pepper to taste
  • 3-4 cups of cabbage slaw (or you can use shredded lettuce, but you will need to add 1/2 cup shredded carrots)
  • 2-3 green onions, chopped
  • 1 small red bell pepper, diced
 
Add your yogurt, buttermilk, lime juice and zest to a large bowl and add salt and pepper. Mix well.
 
Add mustard, garlic powder and cilantro and mix well. Add the slaw, onions and pepper and toss to coat well.
 
Meat for Chicken Nachos:
 
- 5 thin cut chicken breasts
- 1 can of Rotel
- 1 can of green chilies
- Taco seasoning of choice, to taste (I use the B.T.Leigh's Sauces and Rubs Somethin’ to Taco ‘Bout)
 
Add the Rotel and chilies to a crockpot and place your chicken on top. Sprinkle taco seasoning on top and cook for 3-4 hours on high or 5-6 on low. When the chicken is done, shred it with two forks.
 
Serve the chicken over tortilla chips with the slaw on top and garnish with shredded cheese and sour cream. Enjoy!
