Summer Veggie Salad
Jul 14, 2024Here’s what you need:
- 4 Roma tomatoes, diced
- 1 medium yellow squash, diced
- 1 English cucumber, diced
- 2 banana peppers, finely diced
- 1 medium onion, finely diced
- 1 green bell pepper, finely diced
- 1 can Bush's Black beans, drained and rinsed
- 1-2 cups sweet corn, drained
- 1-2 Tbsp. fresh cilantro, chopped
- 2 tsp. minced garlic
- Zest of 1 large lemon
- choice of cheese for garnish
For the dressing:
- Juice from 1 large lemon
- 1/2 cup apple cider vinegar
- 1/2 cup avocado oil
- 1 tsp. all-purpose seasoning (I used B. T. Leigh's "Somethin' for Everything")
Prepare your veggies and add all of them to a large bowl with the black beans, corn, cilantro and lemon zest.
In a shaker bottle or mason jar with a lid, add your lemon juice, avocado oil, apple cider vinegar and seasoning. Give it a good shake to combine them all well. Pour over your veggies and give it a good toss. Top with your choice of cheese. Enjoy!
