Stuffed Peppers For Two

Here's what you need:

  • 2 bell peppers (any color), tops removed and deseeded
  • 1/2 lb. ground beef
  • 8 oz. tomato sauce, divided
  • 1/4 cup uncooked instant rice
  • 3 Tbsp. shredded cheddar cheese, divided
  • 1 Tbsp. diced onion
  • 1/2 tsp. Worcestershire sauce
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 large egg, slightly beaten

Preheat your oven to 375F. Cut tops off of peppers and discard; remove seeds. Place in the bottom of an 8x8 pan lined with foil.

In a bowl, combine meat, 1/4 cup of tomato sauce, rice, 2 Tbsp. cheese, onion, Worcestershire sauce, salt, pepper, and egg. Mix well to blend and incorporate everything. Stuff the peppers well with the meat mixture. Pour the remaining tomato sauce over the top of the peppers. Cover and bake in your preheated oven for 50-60 minutes or until the meat is cooked all the way through. Remove from oven and remove the cover. Sprinkle with additional cheese and return to the oven for 5-10 minutes or until the cheese is melted and golden. Serve with salad, veggies and some tortilla chips or crusty bread. Enjoy!

Notes**: 

1. You can sub out the rice for 1/2 cup chickpeas that have been chopped in a food processor.

2. I used turkey sausage and it was delicious, but you can use ground beef, pork, chicken or turkey. 

3. I used a bit more cheese than it called for and I think it was perfect. I would recommend using about 1/2 cup in the meat and then extra to sprinkle on top. I used a mix of Romano and Parmesan in place of the cheddar.
