Sassy Chicken & Peppers

Here's what you need:

  • 2 chicken breasts OR boneless, skinless thighs
  • about 1 1/2 Tbsp. avocado oil
  • Taco Seasoning of choice (I love the B.T.Leigh's Sauces and Rubs “Somethin’ to Taco Bout” seasoning)
  • 1 small sweet onion, thinly sliced
  • 1/2 small orange bell pepper, thinly sliced
  • 1/2 small red bell pepper, thinly sliced
  • 1 Tbsp fresh lime juice
  • 1/4 cup salsa of choice

Heat your oil in your skillet over medium heat and season the chicken with the taco seasoning. Fry until fully cooked and the juice runs clear. (About 5 min on each side) Remove from the skillet, set aside and keep warm.

In the same skillet, add your peppers and onions and sauté until they are tender crisp. Add the lime juice and salsa and heat through. Plate your chicken and top with the peppers/onions.

My modifications:
1. I seasoned my chicken with salt and pepper, along with the taco seasoning.
2. I used 1 small orange bell pepper and added about 1/4 cup of roasted red peppers at the same time as the lime juice and salsa.
3. I used 1/3 cup of salsa.
4. I used the juice of 1 small lime which was about 2 Tbsp total
5. I plated my chicken on a bed of fresh spinach and added sliced avocado and "Hint of Lime" chips on the side.
6. I zested my lime and added that on top of the peppers for garnish.
