Potato Soup

Adapted from original recipe by: Mama Sue's Southern Kitchen
 
Here’s what you need:
  • 1 - 32 oz. bag of frozen Ore-Ida Hash Brown Potatoes
  • 32 oz. Chicken broth
  • 1 packet of Pioneer Country Gravy Mix (or any country gravy mix)
  • 1 medium onion finely diced
  • 1 cup finely chopped carrots
  • 2 Tbsp. minced garlic
  • Salt & Pepper to taste
  • 1 cup milk (optional)
  • 2 Tbsp. butter
In a medium sauce pan, melt your butter and add the onion and carrots. Sauté for 5-7 minutes until tender. Add the minced garlic and stir to combine. Add the hash brown potatoes, gravy packet and chicken broth. Stir to combine all ingredients together. 
 
Add your milk now, if using, and stir to incorporate. Cook over medium heat until it comes to a boil, then turn down to low and cover, cooking for 30 minutes until the soup is thick and creamy. Salt and pepper to taste, add your toppings and enjoy!
 
NOTES**: You can add whatever toppings you like to this. 
 
The milk is optional and will make it creamier, but it not necessary. It's a preference thing for me!
 
Make sure you don't use the sausage gravy mix, it needs to be the "Country Gravy".
