Peanut Brittle

Here's what you need:
- 2 cups granulated sugar
- 1/2 cup hot water
- 2 cups (1 - 16 oz bottle) light Karo syrup
- 2 Tbsp. unsalted butter
- 2 cups raw peanuts
- 1 tsp. vanilla
- 2 tsp. baking soda
You will need a candy or digital thermometer for this recipe. Lightly butter a 10x15 baking pan with sides and set aside.
Add your sugar, Karo and hot water to a heavy saucepan. Cook over medium/high heat, stirring frequently until the mixture comes to a full boil and reaches 250F. Now add the butter and peanuts and stir constantly until the mixture returns to a boil and reaches 310F. This will take several minutes, so be patient. :)
When it reaches 310F, remove from the heat and add the vanilla and baking soda. Work quickly to stir the baking soda into the sugar/peanut mixture. It will start to foam up and expand. This is normal.
Quickly pour into your prepared baking sheet and allow the mixture to flow on its own across the pan. DO NOT spread it or smooth it out as this will break the bubbles and cause it to collapse and be flat and very hard. Allow to cool completely before breaking into desired size pieces. Enjoy!
