Pea Pesto Crostini

Here's what you need:

  • 1 - 10 oz. bag of frozen peas, thawed
  • 1/3 cup extra virgin olive oil
  • 1 garlic clove, minced (or to taste)
  • 1/2 cup fresh grated parmesan cheese, plus additional for garnish
  • salt and pepper to taste
  • cherry tomatoes, sliced, or 1 small tomato, diced, for garnish

Add your thawed peas, olive oil, garlic, parmesan cheese, salt and pepper to your food processor. Blend until it's well combined and smooth. 

You can either place it on small pieces of bread that you've toasted in your skillet, topped with the tomatoes and a sprinkle of cheese or serve as a dip with bagel chips and pretzels. Either way, it's delicious! Enjoy!
