Mocktail - Mint Julep

For the Mint Simple Syrup:
- 1 cup water
- 1/2 cup sugar
- 1 cup of mint leaves
For the Julep Mocktail:
- 1 cup ginger ale or non-alcoholic bourbon
- 1/4 cup of the mint simple syrup
- crushed ice
- mint sprigs for garnish
To make the mint simple syrup:
Add 1 cup of water to a saucepan. Add the sugar and warm over medium heat, stirring to dissolve the sugar. Once the sugar is completely dissolved, add the mint and increase the heat to medium/high until the mixture comes to a gentle boil, stirring occasionally.
Reduce heat to low and cover with a lid. Allow to simmer for 10 minutes covered.
Remove from heat and allow to cool completely, leaving the pan covered. Leave covered until completely cooled. The longer you leave it, the stronger the mint flavor will be.
Once cooled, strain into a small jar or pitcher.
Fill your cups with crushed ice. Add 1/2 cup of ginger ale or non-alcoholic bourbon to each cup, then 1/4 cup of the mint simple syrup. Stir gently and garnish with a mint sprig. Enjoy!
