Maple Cherry Crunch

Here's what you need:

  • 32 - 42 oz. cherry pie filling
  • 1 1/2 cups rice chex, processed into a fine crumb
  • a scant 1/4 cup brown sugar
  • 1/2 tsp. cinnamon
  • 1/2 cup butter, cut into pats
  • 1/3 cup maple syrup
  • 3/4 cup pecans, chopped

Preheat your oven to 350F. Lightly butter the bottom and sides of a 2-quart baking dish. Set aside.

In a food processor, process your Rice Chex until they are a fine crumb. Add the brown sugar and cinnamon and blend to incorporate well. Now, add the butter pats and blend until its incorporated and the mixture is a crumble consistency. 

Pour your pie filling into the bottom of the baking dish. Pour the maple syrup over the top of the cherries. Sprinkle the crumble mixture over the top and then sprinkle chopped pecans over the crumble mixture. 

Bake in your preheated oven for 30 - 35 minutes or until the crumble is brown and crunchy. Remove from oven and allow to cool a bit before serving with vanilla ice cream on the side. Enjoy!
