Mamaw's Oatmeal Cake

Here's what you need:
  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 tsp baking soda
  • 1 heaping tsp cinnamon
  • 1/2 tsp salt
  • 1/2 cup neutral oil (I use avocado oil)
  • 2 eggs
  • 1 1/4 cup all-purpose flour
  • 1 cup Quick Oats
  • 1 1/2 cup boiling water
For the icing/topping:
  • 1 stick of butter
  • 1 cup brown sugar
  • 1 cup heavy cream
  • 1 tsp vanilla
  • 1 cup walnuts (or pecans)
  • 1 cup sweetened coconut (or more if needed)
  • Coconut for toasting on top
In a small bowl, pour the boiling water over the oatmeal and stir to combine. Set aside while you make the cake batter.
 
In a large bowl, add the sugars, egg, and oil and mix to combine. Add the baking soda, cinnamon and salt and mix to combine. Add the flour and mix well. The batter will be VERY thick/stiff. Add the oatmeal and mix to combine. The heat from the oatmeal will help to loosen the batter and it will become a lot thinner.
 
Pour this batter into a greased and floured 9x13 pan and bake in a preheated 350-degree oven for 30-35 min.
 
While the cake is baking, you can make the icing/topping.
 
In a medium saucepan, over medium low heat, melt the butter, brown sugar, and heavy cream.
 
Cook, stirring often, until it comes to a full rolling boil. Boil for 2-3 minutes until mixture is thick.
 
Remove from heat and add vanilla, nuts, and coconut. Stir well to combine. You can add additional coconut, if you think it is too thin.
 
When the cake is done and cooled just slightly, pour the topping over and spread evenly. Sprinkle additional coconut on top and place under the broiler, just until it is toasted.
