Lemon Pasta
Aug 22, 2024Here's what you need:
- 8 oz. spaghetti (or pasta of choice)
- 2 Tbsp. Olive Oil
- 1 medium onion, diced small
- 2 tsp. minced garlic (or to taste)
- 2 lemons, juiced and zested
- 1/2 - 2/3 cup shredded parmesan cheese, plus some for garnish
- Salt and Pepper to taste
Bring a large pot of salted water to boil and cook your pasta according to directions on the box, stirring occasionally. Cook to al dente.
Add olive oil to skillet and heat over medium-high heat. Once hot, add the onion and garlic and cook for 6-7 minutes until tender and just starting to brown slightly. Do NOT overcook! Lower the heat, add the lemon juice, lemon zest, and parmesan cheese. Season with salt and pepper to taste and cook for a few minutes to thicken slightly.
Once the pasta is cooked, drain, but reserve about 1/2 cup of the pasta water in case you need it to add to the pasta. Add the drained pasta to the lemon sauce and toss to coat. Add the pasta water, a little at a time, until you reach the consistency you prefer.
Serve with a protein of your choice and garnish with a bit of additional parmesan cheese. Enjoy!
