Keto Biscuits

- 1 cup almond flour
- 1 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 Tbsp. cold, unsalted butter, cut into cubes, divided
- 2 Tbsp. heavy cream
- 1/2 cup shredded cheddar cheese
- 1 large egg
Preheat your oven to 375F. Put 1 Tbsp. butter in the bottom of a small cast iron skillet and melt it in the oven as it preheats. (Or line a baking sheet with parchment paper and set aside.)
In a large bowl, add the almond flour, baking powder and salt. Mix well with a large fork or whisk. Add the butter and use a fork to blend into the flour mixture until it resembles coarse pebbles or crumbles.
Use the fork to whisk in the heavy cream, 1 Tbsp. at a time. Whisk in the egg and cheese until a smooth dough forms.
Divide into 4 - 8 balls and drop into your hot cast iron skillet (or place on your baking sheet). Bake for 18 - 20 minutes, or until they are golden brown. Enjoy!
