Hungarian Cucumber Salad

- 2-3 English cucumbers, sliced very thin
- 1 medium onion, quartered and sliced very thin
- 1 cup of cold water
- 1/4 cup of vinegar (can use red wine or apple cider)
- 1 Tbsp. sugar
- 1-2 tsp. salt
- 1 tsp. minced garlic (or 1 fresh garlic clove minced)
- Paprika to taste
- Pepper to taste
Slice your cucumbers and add to a bowl. Sprinkle with the salt and allow to sit for about an hour (at least 30 minutes).
While the cucumbers are marinating/soaking in the salt, quarter and slice your onion very thin.
In another bowl add water, vinegar and sugar. Stir to fully dissolve the sugar. Set aside.
When the cucumbers are ready, add the onions to the vinegar/water mixture. Add 1 tsp garlic and give it a stir.
Squeeze the excess water from the cucumbers and add to your bowl with the onions. Give it a stir to combine. Sprinkle with fresh ground pepper (or regular pepper) and paprika. Serve chilled and ENJOY!
