Honey-Garlic Crockpot Chicken

For the chicken:
- 4-6 chicken thighs, boneless & skinless (can also use breasts, if you prefer)
- 1/2 cup soy sauce
- 1/2 cup ketchup
- 1/3 cup honey
- 3 garlic cloves, minced
- 1 tsp. dried basil
- salt and pepper to taste
Arrange your chicken in the bottom of your crockpot (single layer) and season with salt and pepper to taste.
In a small bowl, whisk together the soy sauce, ketchup, honey, garlic and basil. Pour over the chicken.
Cover and cook on Low for 6 hours or High for 3-4 hours.
Serve over rice or noodles. Enjoy!
For the rice:
- 1 1/2 Tbsp. avocado oil
- 2-3 garlic cloves, minced
- 1 cup of rice of your choice (I prefer Jasmine rice over any other, but you can use whatever you like. I used Minute Rice in the video because I was out of Jasmine rice.)
- 1 cup of chicken stock
- salt and pepper to taste
- 1 Tbsp. butter (optional)
Add your oil to a saucepan and heat over medium heat. Add garlic and sauté for about 15 seconds, careful not to burn it. Add your uncooked rice and sauté for about 30 seconds or so until it's well coated in the garlic and oil. Add your chicken stock (it should just cover the rice) and bring to a full rolling boil.
Once it's at a boil, remove from the heat and cover. Allow to set until the rice is done. The time will depend on the type of rice you use. Minute Rice will be about 5-6 minutes, Jasmine rice will take a bit longer. Enjoy!
