Homemade Tomato Soup

- 4 Tbsp. butter
- 1 medium sweet onion, chopped
- 1 quart of tomato chunks
- 1 1/2 cups of chicken broth (you can sub out water, beef or vegetable broth also)
- salt to taste
- basil (fresh or dried) to taste (optional)
Melt your butter in a saucepan and add the onion, tomatoes and broth. Season with salt and basil and simmer over medium heat for 35-40 minutes or until the onions are soft. Using an immersion blender, blend up the soup until it's the consistency you like. Enjoy!
**NOTES:
- You can add a little slurry of cold milk and corn starch to thicken it up a bit, if you like
- Top with shredded cheese, sour cream or croutons
- This is delicious served with a grilled cheese sandwich
