Homemade Spaghetti & Meat Sauce

Here's what you need:

  • 29 - 32 oz. stewed tomatoes
  • 8 oz. canned tomato sauce
  • 2 - 3 cloves of minced garlic, or to taste
  • 1 - 2 tsp. dried oregano, or to taste
  • 2 tsp. partially dried parsley (or about 1/4 cup fresh parsley, chopped)
  • 2 tsp. partially dried basil
  • salt and pepper to taste
  • 2 - 3 Tbsp. olive oil (for sautéing veggies)
  • 1 medium onion, diced
  • 1 red bell pepper, diced
  • 1 - 1 1/2 lbs. ground meat of your choice (beef, chicken, and turkey all work well, but I used ground ostrich in mine because of my Alpha-Gal allergy)

In a food processor, add your stewed tomatoes, tomato sauce, garlic and seasonings. Blend until it's smooth. Add the sauce to a heavy saucepan and cook over medium heat, stirring occasionally and simmer for about 30 minutes while you make your meat and noodles. 

In a skillet, add olive oil and heat over medium heat. Add your onions and peppers and cook until they are starting to get tender. Add your meat and cook until there is no pink showing and it's fully cooked. 

Add your meat and veggie mixture to the marinara sauce and stir to combine. Allow to simmer for a few minutes to incorporate those flavors! Serve over your favorite pasta with a side of garlic bread. Enjoy!
