Homemade Pancakes

Here's what you need:

  • 1 ½ cups all-purpose flour
  • 3 ½ tsp. baking powder
  • 1 ½ Tbsp. sugar
  • ¼ tsp. salt, or to taste
  • 1 ¼ cups milk
  • 3 Tbsp. butter, melted
  • 1 egg, beaten
  • 1 ½ tsp. fresh lemon juice
  • splash of vanilla extract

 

Sift flour, baking powder, sugar and salt into a large bowl. Add milk, melted butter, beaten egg, lemon juice, and vanilla. Whisk until smooth. Do not overmix or the pancakes will be tough.

Heat your skillet or griddle over medium-high heat. Pour or scoop your batter onto the griddle, using approximately ¼ cup for each pancake. Cook until bubbles form and the edges are dry, about 2-3 minutes. Flip and cook until browned on the other side. Repeat with remaining batter. Serve with your favorite syrup and toppings and ENJOY!
