Fried Dill Potato Salad

Here's what you need:

  • 2 - 3 cups potatoes, pre-cooked and diced
  • 1 medium onion, diced
  • olive oil
  • 1 Tbsp. butter
  • 1 1/2 cups plain Greek yogurt
  • 1 cup mayo
  • 1 Tbsp. yellow mustard
  • 1 medium cucumber, chopped
  • 1/4 cup (or about 4) green onions, chopped
  • 3 - 4 baby dill pickles, diced (about 1/4 - 1/3 cup)
  • 1 Tbsp. dill weed (fresh or dried)
  • 1 Tbsp. parsley (fresh or dried)
  • black pepper to taste

In a skillet, add olive oil and butter and sauté your onion for 1 - 3 minutes. Add your pre-cooked potatoes and fry them until they are as golden as you like. I think, the crispier the better!

While the potatoes are cooking, in a large bowl, add yogurt, mayo, mustard, cucumber, green onions, pickles, dill, parsley, and pepper. Mix well to combine everything and set aside. 

When the potatoes are cooked to your liking, allow them to cool off. Now add them to the dressing mixture and mix well to combine. Serve with a sprinkle of dill on top. Enjoy!
