Fish Taco w/Orange Slaw

Here's what you need:

  • 10-12 oz. fish of your choice
  • avocado oil for frying fish (about 1/4 cup or so)
  • 1/2 cup all-purpose flour
  • 1/2 cup corn meal
  • Extra virgin olive oil
  • about 2 Tbsp. taco seasoning of your choice, divided
  • 1/2 medium purple cabbage, shredded
  • 1 cup julienned or shredded carrots
  • 3 - 4 green onions, chopped
  • juice from 1 large orange, about 1/3 - 1/2 cup
  • 3/4 cup mayo
  • salt to taste
  • tortilla shells of choice or hard taco shells
  • toppings like, avocado, sour cream, shredded cheese, salsa, etc.

Cut up your fish into chunks (or you can leave the filet whole) and add to a medium bowl. Drizzle with olive oil and sprinkle about 2 tsp. of taco seasoning. Toss to coat and set aside. Add your corn meal and all-purpose flour to a bowl. Mix them together and set aside. 

In a mixing bowl, add shredded cabbage, carrots, green onions, orange juice, 1 Tbsp. taco seasoning, mayo and a sprinkle of salt. Mix well to combine. Taste and adjust seasonings to your liking. Set aside.

Heat your avocado oil in a skillet over med-high heat. Coat your fish in the cornmeal/flour mixture. Fry the fish until golden brown on both sides, about 3-4 minutes per side, or until it flakes easily with a fork. Don't worry if it falls apart a little...it will be fine! 

Assemble your tacos with the slaw, fish, and toppings of choice. Enjoy!
