Crockpot Sweet & Sour Meatballs

- 10 - 12 frozen meatballs, thawed
- 3 Tbsp. sugar
- 1 1/2 Tbsp. cornstarch
- 3 Tbsp. white vinegar
- 1 Tbsp. maple syrup
- 1 Tbsp. miso paste (mixed with 2 Tbsp. water)
- 1 small green bell pepper, cut into 1-inch pieces
- 8-10 oz. fresh or canned pineapple chunks, undrained
- hot cooked rice for serving
Add the thawed meatballs to your crockpot. In a small bowl, add the sugar and cornstarch. Mix with a fork to break up any lumps. Add the maple syrup, white vinegar and miso. Stir to combine well and dissolve the cornstarch.
Pour this mixture over the meatballs. Add the bell pepper on top. Cover and cook on LOW for 4 1/2 hours or until the peppers are crisp tender.
Remove the lid and add the pineapple chunks and juice. Stir to combine and then cover and cook an additional 30 minutes. Serve over hot cooked rice with a side salad or vegetable. Enjoy!
