Emu Roast & Veggies (Crockpot)

- 1 - 1 1/2 lbs. roast (emu or beef)
- 1 can Cream of Mushroom Soup
- 1 can of water
- 1 1/2 tsp. (or to taste) of Black Truffle & Herb seasoning from Pampered Chef (or seasoning of your choice)
- 3/4 cup diced sweet potatoes
- 1/2 cup whole baby carrots
- 3/4 - 1 cup baby bella mushrooms, sliced thick
- salt & pepper to taste
- 1 cup pre-cooked potatoes, cut into large pieces
Add condensed soup and water to a small bowl. Add truffle seasoning and salt and pepper to taste. Mix well to combine and set aside.
Add your roast to your crockpot and add your veggies (except the potatoes!) on top. Pour soup mixture over the veggies. Cook on high for 2 hours and then turn down to low and cook 7 hours. Add your potatoes and cook one more hour. Serve with crusty bread or rolls. Enjoy!
